Baking

Food 3 is baking,this is all about pies & pastries, cookies & biscuits, breads & cakes. We learned about the materials and equipment to be used in baking. Some of the important tools and equipment are baking pan,wooden ladle,electric mixer,bowl,baking sheets, spatula,pan glass, measuring cup & spoon,cutters-to cut out cookies from rolled dough,pastry brush,pastry bag,writing tip,leaf tip,star tip,oven & etc. We baked pine apple pie,muffins,dinner roll,pandesal,doughnut,moist chocolate cake,chiffon cake,butter cake,refrigerator cake,fruit cake,& orange chiffon. The cherished the experience I had in baking because I really enjoyed and learned new things. Though it was tiresome determination to learn encouraged me to pursue. I cant forget the 1st time I've baked a cake because it was my most awaited activity to happen. I am totally excited because at last I'll learn how to bake. At 1st its not really perfect but as the days pass by i knew how to do it. I really love my butter cake and moist chocolate cake because I felt my effort in doing that.The result was delicious and presentable enough.




Make Really Moist Chocolate Cake

This chocolate cake is especially moist. The secret ingredient is two cups of black coffee, and for coffee haters like me, the best part is that it doesn't taste like coffee!

Difficulty: Moderately Easy


Instructions:


Step 1


  1. 2 Cups Flour
  2. 2 Cups Sugar
  3. 2 tsp. Baking Powder
  4. 2 tsp. Baking Soda
  5. 1/2 tsp. Salt
  6. 2 tsp. Vanilla
  7. 9 Tbsp. Cocoa
  8. 7 Tbsp. Margarine or Butter
  9. 2 tsp. Coffee, mixed with 2 Cups boiling Water
  10. 2 Eggs, Beaten



Step 2

  1. Preheat the oven to 350 degrees. Mix all of the dry ingredients, add liquid ingredients, mix with mixer on high for about five minutes.


Step 3

  1. Batter should be very thin; water and coffee increase moistness of cake.
  2. Grease and flour cake pan, bake for 30 minutes, checking center (toothpick should come out clean).


Step 4
  1. To make Cupcakes, put cupcake papers into muffin pan, fill each paper half full with batter, and bake at 350 degrees for 15- 20 minutes. For a Bundt cake, bake at 350 degrees for 40-45 minutes.

FOOD SELECTION, PREPARATION, & SERVICES

This was the 1st major subject that we took up in first year. Food selection, preparation & services was all about the proper choice of foods,ingredients,tools & equipments. The proper selection of foods that are healthy & highly nutritious,the consideration of price and quality of ingredients & materials to be used. We also had skirting,table clothing,proper cutting/ slicing of fruits & vegetables,meats & spices. We had discussed food services and its kind, and the food catering. Embutido,salad dressings,chicken cordon blue,four seasons, sweet and sour,& many more.

CHICKEN LOLLIPOP


Ingredients:
  • 5 chicken drumettes shopping list
  • 1 tsp minced ginger shopping list
  • 1 cube fermented red beancurd, mashed ( optional, all-purpose cajun seasoning is great too )
  • 1 egg white
  • 1 egg yolk
  • shaoxing wine ( OR other chinese cooking wine )
  • ground black pepper
  • salt and sugar to taste
  • cornflour shopping list
  • panko breadcrumbs shopping list


Procedures:

  • With a knife, pull and scrape the meat off the top to the bottom of the chicken drumette.
  • Marinate the chicken with minced ginger, mashed fermented red beancurd, egg white, black pepper, salt and sugar.
  • Set the chicken in the refrigerator and let it marinate for about 10 minutes.
  • Dip the chicken drumettes into the cornflour, then dip them into the egg yolk wash, and continue the same with the breadcrumbs.
  • ( TIP : Quick chill in the freezer while the oil is heating up on the frying wok, to prevent breadcrumbs from falling off into the oil while frying )
  • Deep fry the chicken drumettes on medium-high heat until golden brown.
